SYC offers an international catering team famous for Asian-fusion cuisine, taking inspiration particularly from Japan. While we may be listed as Modern Australian, our menu has been designed with a passion for balanced flavours, offering a personal interpretation of Executive Chef Kol Gemmell’s favourite Japanese experiences, where he was exposed to a diverse range of food experiences in people’s homes, on the streets, in restaurants and of course, in his own restaurant kitchens.
The menus at SYC draws on Gemmell’s years spent working throughout Japan, sophisticated menus present only the freshest seafood, local produce and organic ingredients, featuring a wide variety of unique and original dishes inspired by a combination of various regional cuisines with new ideas. Intimate bursts of flavour for the start of the meal to set the stage, and at the end of the meal for reflection, our menu emphasises freshness, presentation and above all, flavour.
